This spice is used in food industries as a digestive aid, condiment and in pickles. Aside from its culinary uses, Asafoetida may also be employed medicinally. It is used in immune systems and antibiotic drugs. However, the main use is as a fragrance in perfumes.
Among 172 species of Ferula, 15 species are exclusive and endemic of Iran, which “galbanum” with the scientific name of ferulagummosa is one the most-know species of them. Iran annually exports about 70 tons of Asafoetida in raw form. Iran would export as exclusive exporter of sweet Asafoetida since Achaemenian to India, then processing industries has been established in India; India has the most importing value of Asafoetida from Iran.
According to research findings, the chemical constituents behind pharmacological properties of Asafoetidaare ferulic acid, a-pinene, a-terpineol, luteolin, azulene, vanillin, umbelliferone, isopimpinellin. Also Asafoetida contains a bounty of vitamins and minerals such as calcium, phosphorus, iron, carotene, riboflavin, and niacin.
